Tenerife – Treats from the regional cuisine

It is very much recommended whilst visiting Tenerife to indulge in the typical cuisine of the island. The Canary specialties persuade gourmets with their excellent taste, simplicity and originality.
Tenerife‘s fish is consistently refined and prepared in a different manner. Some of the variations include simple preparation with oil, vinegar and pepper or with numerous mojo sauces. The most popular types are parrot fish, common dentex and pandora as well as trout, pilchards and mackerels which can often be found on menu.

Meat specialities are often served at traditional festive periods: mainly pork with spicy sauces, goat and rabbit in Salmorejo (type vinaigrette) with Papas Arrugás (cooked in salty water, not peeled potatoes).
Potatoes are a popular side dish. On Tenerife you can find them in different sizes, textures and colours. Particularly tasty are the “Bonitas” and black potatoes. Some other traditional side dishes are goats curd, chickpea hotpot, numerous mojo sauces and Gofio (side dish made out of roasted wheat).

Sweet gourmet treats are provided by the local desserts: Huevos Moles (confectionary made from egg yolk), Rosquetes Laguneros, Bienmesabe (sweet thing made from egg yolk and almonds) and Leche Asada (dessert made from goats milk, sugar, eggs and palm syrup). All desserts get a particular taste by adding palm syrup. A typical fruit salad for this island comprises of fruits such as mango, papaya, avocado, pine apple und bananas.

Tenerife has the largest and most diverse wine production on the Canary Islands. The trademark protected original names Abona, Tacoronte-Acentejo, Valle de Güimar, Valle de la Orotava und Ycoden-Daute-Isora correspond perfectly with local specialties.
